Goat and spinach stew
Ingredients: I kg goat meat, diced; Opaki-paki spice; roasted and pounded; Sunyak bah spice;Sunyak bah spice;Chicken or beef stock; 1 bunch spinach, leaves only; 1 ladleful palm oil; 1 ladleful dried shrimp.
Direction: 1.Marinate the goat meat for at least thirty minutes the opaki-pak...i and hot peppery sunyuk bah which have been pounded in the mortar and pestle after a little roasting;
2. Fry the meat with the onions and then braise gently in the stock for about an hour; When tender, you add palm oil and some dried ground prawns and the spinach.
3.The palm oil has a strong red colour and gives a rich, strong taste to the dish. Simmer for a further 20 - 30 minutes.

Slow-roasted lamb(mechoui)

Ingredients:ground allspice, cinnamon, cumin, turmeric; dried chilli flakes; garlic cloves, crushed; unsalted butter, softened; lamb shoulder, bone in; cumin seeds, toasted, roughly ground; sea salt flakes;
How to do it: 1.Preheat oven to 140°C. Combine spices, garlic and butte...r in a bowl. Roast for 8 hours; 3, Combine cumin seeds and sea salt; Shred lamb into large pieces to serve.

Jollof rice with fish.

1.Toss fish fillets gently in garlic and ginger, salt and pepper. With 1 tablespoon of oil.
2.Heat remaining 2 tablespoons of olive oil in a large frypan over medium heat, add the diced onion and fry. Add garlic, ginger and chilli and spices. Add tomato paste, stirring. Then add dice...d tomatoes and carrots.
3.Add the rice and 600 ml water, mix it well, and then cover the frying pan. Keep stirring. Cook for 20 minutes. Add more water. Meanwhile place fish on a foil lined baking tray and place under the oven grill.When the rice is cooked to your liking, serve with the fish. Jollof rice is best served hot.

keema chapati - stuffed flatbread

1.Heat oil in a large frying pan. Add onion, garlic, ginger, chilli and coriander roots. Cook for 7 minutes. Add lamb, garam masala and turmeric and cook for a further 10 minutes. Stir through coriander leaves and lemon juice.
2.Place 280g flour and 1 tsp salt in a bowl.... Pour in 220 ml warm water and mix to a soft dough. Transfer dough to a lightly floured work surface and knead for 10 minutes or until smooth and elastic. Return to bowl, cover with a damp cloth and set aside for at least 1 hour. Divide dough into 10 golf ball-size pieces. Transfer to a lightly floured work surface and roll out each piece to form a thin 20 cm round.
3.Combine 2 tbsp flour and 2 tbsp warm water in a bowl. In a separate bowl, combine mince mixture and eggs. Shape 1 cup mixture into a square in the centre of each chapati. Fold in sides to enclose filling and seal with flour paste.
4.Heat 1 tsp ghee in a frying pan over medium heat. Working one at a time, cook chapatis for 2 minutes on each side or until golden. Repeat with remaining chapatis and ghee.

Vegetarian Soup from West Africa

1. To make peanut butter, process peanuts in food processor about 2 minutes until smooth, scraping the bowl at least once.
2. In a Dutch oven over medium heat, sauté onion in oil about 7 minutes until lightly browned.
3. Add peanut butter plus sweet potato through tomatoes....
4. Bring to a boil, reduce heat and simmer, uncovered, about 30 minutes until sweet potato is tender.

Peanut Soup
Firstly, Saute the onions in oil then stir in the cayenne and ginger; Add the carrots and saute; Mix in the potatoes and stock;
Secondly, Bring the soup to a boil and then simmer for about 15 minutes until the vegetables are tender; In a blender, puree the vegetables with the cooking liquid an...d the tomato juice then return the puree to the soup pot;
Third, Stir in the peanut butter until smooth; and reheat the soup gently, using a heat diffuser. Serve it!

African Banana Coconut Bake
Heat oven to 375°F; Cut bananas crosswise into halves;
Cut each half lengthwise into halves and arrange in greased 9-inch pie plate; Dot with margarine or butter and drizzle with orange and lemon juices;
Sprinkle with brown sugar and coconut;
Bake until coconut is golden, 8 to 10 minutes.    

Piri piri African Chicken
In a large bowl, stir together the paprika, chili powder, lemon juice, garlic, ginger and salt. Rub chicken with the mixture, place in a dish, and marinate for 3 hours; Preheat a grill for medium heat; Place chicken onto the grill and discard the marinade. Cook for about 30 minutes, turning occasionally, until the skin is slightly charred and juices run clear.

West African Chili
Put the ham hock, bay leaves, garlic cloves, cumin and whole, dried lantern chilies in a large pot, cover and bring water to a boil and then add salt.
In other pan, put oil and cut up the onions and caramelize them with the lid on. Add the cumin powder, curry powder, chili powder and ho...t paprika and coat the onions with the spices and toast the spices. Cut the tomatoes shave them into the onions, discarding the skins. Stirring.
Cut cauliflower,carrots and chard.Then remove all the solid things. Discard the spices, remove the meat from the ham hock bone, skin it, and chop up the meat and add them and the bone back into the broth.Add the cauliflower and carrots to the broth, wait 5 mins.Add the tomato-onion mixture. Then add the chard bits and stir.When it boils again, add the squished garlic.

Sauced Roast Turkey, Nigeria

Ingredients:8 Turkey wings; 1 tspn thyme; 1 tspn curry;
1 tspn Cameroon pepper; salt ; 2-3 cubes Maggi; ½ medium onion; 2 cooking spoons Nigerian Sauce (divided)
Directions:1,Combine all ingredients except the sauce. Steam on low-medium heat until turkey is cooked and mostly dry;
2,Preheat oven to 400F;...
3,Add half of the sauce into the turkey and stir to combine; Arrange turkey on a lightly greased oven tray. Spread on the left over sauce and sprinkle on more Cameroon pepper;
4,Bake for 25 minutes or until golden;

Grilled Croaker Fish ,Nigeria.

Sauce ingredients:1/2 large onion; 1 red bell pepper – Chopped; 1-2 red chili peppers; 1 cube maggi; 1 tablespoon vegetable oi;
How to do it: 1.Combine all sauce ingredients in a blender, pulse to a coarse texture. Set aside;
2. Start by making 2-3 slashes on both sides of the croaker. Season with salt, maggi and pepper. Set as...ide to marinate for a couple hours or overnight.
3. Preheat grill, brush seasoned fish with oil & cover with half of the sauce. Grill until cooked.
4. Transfer fish to a lined oven tray. Place in oven and cook for 12-15 minutes or until cooked through.

Coconut Rice and Beans,Nigeria

How to do it:1.Wash and drain beans;
2.Place a large pot on medium-high heat, add in beans, onions and 5 cups of water. Cover and leave to cook until beans is soft (about 1hr30mins)
3.Add rice, salt and coconut milk into the cooked beans, stir to combine.
4.Balance out the liquid in the pot so that there is just enough to cover... mix.
5.Reduce heat to low-medium, simmer until rice is cooked through (about 25-30 minutes)
6.Remove pot from heat and fluff rice & beans with a fork.
